March 8th - ACE staff & students were commissioned by Island Pacific Supermarket to cook & serve lunch for Boxing Champ Manny Pacquiao & Pacman team, family & friends of 150 as a sendoff luncheon when he flew to Dallas on a private plane for his next fight.

ACE community service opportunities give students and graduates practical experience with cooking, accounting & management techniques that will train you to work in the food industry. The Scoop on ACE


After 30 years of starting & running professional culinary programs all over Los Angeles, Chef de Castro is very excited to have finally opened her own culinary school!  The Academy of Culinary Education is located at 4917 Topanga Canyon Blvd. in Woodland Hills. We are currently accepting students for the Spring Professional Pastry & Cooking Programs. 

Our Professional Programs are designed for individuals thinking of a career in the food industry as chefs, cooks, caterers or other food related personnel. Our aim is to help our students become immediately employable by giving them a solid foundation and practical hands-on experience. They are also recommended for individuals already working in the field who would like to develop more practical knowledge and skills. Serious home cooks are also eligible to take these courses. Our small class size of 10 students max. allows for individualized attention. 

Our programs combine lecture, discussion, demonstration and hands-on cooking, allowing students to learn and practice the techniques of food production in a commercial foodservice environment.

Feb. 27th - Chef Cecilia de Castro, ACE staff & students got to help Wolgang Puck cater the Oscar's 63nd Governor's Ball dinner!
Fall 2010 Pro Pastry Final Projects 
On Nov. 18, the Fall ’10 ACE Pro Pastry class presented their final projects to Guest Chefs and Chef Cecilia de Castro. Students created showpieces based on their chosen area of specialization. Their pieces were judged on originality, taste, and knowledge of pastry techniques.
Students Work with Celebrity Chefs at the 28th Annual American Wine & Food Festival!
On Sept. 24 & 25, ACE students, had the opportunity to work along side with Celebrity Chefs like Wolfgang Puck, Thomas Keller, Jose Andres, François Payard, Scott Conant, Lydia Shire, Floyd Cardoz, Kerry Heffernan doing, cooking, prep and plating for the festival attendees.
Fall 2010 Pro Cooking Graduation Banquet
In order to graduate, students  in the pro cooking class must plan & execute a full service banquet featuring a plated tasting menu for 150 guests.  This class’ menu had 7 passed hors d’ouerves and 7 plated course that featured a variety of ingredients and techniques and highlighted the Fall season’s harvest.

The Red Cross Recognizes ACE Students!
May 27 - The Red Cross presented ACE and the Spring 2011 Pro Cooking Graduates with this Award as a thank you for their fundraising efforts. Students hosted a Gourmet Taco Sale to help raise proceeds for the Red Cross’s relief efforts.

Taste of The Philippines at ACE

on Sun, June 12 from 11am-3pm!

In honor of Filipino-American Friendship Day, Ace Students will prepare street food favorites from the Philipines with proceeds to benefit Habitat for Humanity. Don’t miss out on these unique delicacies only $3 each!! Fried Mini Lumpia(Crispy Eggrolls) served with a Spicy Sweet & Sour Dipping Sauce,Grilled BBQ Pork or Chicken, Pansit Guisado(Stir Fried Rice Noodle), Calamansi or Mango Juice, Turron Saging(Caramelized Banana Rolls) served with Ube Macapuno Ice Cream (Purple Yam & Coconut)!
